Ossobuco di vitello «Sous-vide»
Slowly cooked (48 hours «Sous-vide») veal knuckle 1300g, served with gremolata, seasonal vegetables and creamy risotto
Our veal knuckle is cooked in a bain-marie at 75°C for 48 hours using the sous vide method and then finished off with fresh vegetables in a homemade jus so that the tender meat literally melts in your mouth. We wish you a good appetite and hope that you will be as enthusiastic as we are.
